If anyone needs quick crock pot recipes I've got quite a few...
My favorite I've been making is my own homemade Chipotle bowls.
I put frozen chicken in the crock pot with a decent amount of EVOO and a good amount of chicken broth. The whole point is I don't want the chicken drying out. Put that in there with some salt, pepper, basil, and minced garlic. It's not the same as the Chipotle chicken (I used to work there but can't remember the recipe for the marinade) but it's still good and practically fool proof. Four hours on high, two on low, and the rest of the time on warm. Make some rice (instant or regular is fine tbh), and squeeze lemon juice over it. "Tenderize" the lime by rolling it with your palm on the cutting block to pull the juices out and get more out of it. Chop up cilantro, you'll need more than you think, and then add salt as well. I keep it simple because Brett is picky, so from there I just add some sour cream, shredded cheese, and hot sauce into my bowl. Chipotle guac is SUPER easy. Avocados, lime juice, diced red onions, salt, cilantro, and some finely chopped jalapenos (if you want).
It's delicious, pretty hands off until you have to make the rice, and it's easy to make a ton of food so you have leftovers for the next day.

That sounds so good... and healthier than the one my aunt makes... think she uses an entire container of mayo? She also uses tuna in it. So unhealthy... but so good...

Could you share your recipe for stroganoff? It's one of my fave dishes yet one I still havent been able to master.

Going off the top of my head here because i can't find my darn recipe book that i wrote it in 1 brown onion, finely chopped (i always get onions on the smaller side so i can use the whole thing) 400g of sliced mushrooms (button) 400ml can of condensed cream of mushroom soup 1tbs tomato paste 1tbs paprika (sweet or smoked) 2 crushed garlic cloves 500g thin sliced steak green beans Sour cream I cook up the steak, onion, garlic and mushroom slices, then add the soup, tomato paste, paprika and beans and let it simmer for 10 mins (the soup should be really runny). You can either throw in the sour cream into the whole batch at the end, or you can let people put their own in. It works well in a slow cook too with some potatoes
